Eating more for less










Since I am a vegetarian I have to use a lot of tofu and egg whites for protein. Unfortunately I love carbs and fruits better. SO I need to get a bit more creative with my recipes so I can get full instead of using all my servings/calories that my body needs on carbs.

I've never known how to cook with tofu but am anxious to try it. I did a little research -- I honestly didn't know anything about it -- and hope to try something with it this weekend. I'll share recipes with you when I have some. At least I know about the silken and firm tofu now.

I'd love any tips you can share or simple dinner recipes you enjoy.

I wish I had more tips for you that fit within your vegetarian diet. I'll keep my eyes open for things to share in hopes to give you some more variety.

Once you start using tofu it becomes easier.
Saute it with onions, celery and bell peppers, salt and other seasonings Serve it on a bed of brown rice.
Saute it with garlic, onions, celery and peppers and italian seasonings and put it in spag sauce.
Using the food processor put frozen fruit and silken tofu in with a bit of sweetener and it is yummy!

OK, so if I want to add tofu to spaghetti sauce, do I buy the firm tofu and cut it in small cubes? Do you saute it in olive oil or something so it doesn't stick to the pan?

Tofu smoothie sounds yummy. I have frozen raspberries and peaches in my freezer from last season and think I'll try that recipe this weekend.
